Thymes

Thymes vary in aroma but the majority can be used to flavour cooking. Look for T.vulgaris(common thyme),T.x citriodorus(lemon thyme) and their culitvars. Thymes traditionally were used for the relief of upper respiratory and digestive disorders,the main ones being T.vulgaris and T.serpyllum(wild thyme). Thymes are rich in volatile oil; thymol is a powerful antiseptic.There is a large variety here ranging from the tiny woolly to the Broad leaved thyme. Flower colours range from white through pink to dark crimson. They prefer a sunny,well drained soil,ideal for pots,rockeries and grown alongside a path. Most thymes will attract butterflies and bees.
